Ingredients

  • 2 cups whole rolled oats
  • ½ cup nuts (e.g. cashews, sliced almonds and hazelnuts)
  • ¼ cup sunflower seeds
  • ¼ cup pumpkin seeds
  • 2 tbsp neutral vegetable oil, e.g. ricebran or safflower
  • 1 tsp honey
  • 1 cup dried fruit (e.g. raisins, cranberries, banana chips, dried apricot)
  • 1 tsp mixed spice - freshly ground cinnamon and cloves

Method

Lob all ingredients except the fruit and spices into a breadmaker and set to the "jam" setting. The machine will heat and stir it for over an hour and burn it, so stop the programme early when the oats are just starting to go a nice golden colour. My machine takes about 45 minutes. Alternatively you can toast it in the oven spread out on a baking tray, stirring every 5 minutes.

When done, spread out to cool, and stir in the fruit and spice.

Alternative Method

Don't bother toasting it. Just lob everything except the oil and honey in a big pot and mix. Store in an airtight container.
